For those of us living in the UK, there’s a definite feeling that summer is over. That being said, it barely had a chance to even get well and truly underway!
The Bank Holiday was a scorcher, and then it was back to (grey) business as usual. However, there has been talk of an Indian summer, and I’m a pretty big fan of those.
Do any of you remember about 5 years ago when there was a heat wave in October? October!
No matter what happens weather-wise, this watermelon and elderflower slushie is perfect. If the summer is going to continue, then this will be your go-to drink. And if the sun decides to stay hiding behind the clouds? Well then, sipping this will make sunshine memories feel a little less distant.
I wouldn’t say I love watermelon. Sure, I eat it on occasion, and I like it. Love it? No. But do I love watermelon slushies? Yes, yes I do!
Sweet, tangy, refreshing, and just so good. Add a slug of vodka or gin for a grown-up twist, and you’ve got yourself one helluva partyyy (said in the voice of Kristen Wiig from Bridesmaids).
Like all the best recipes, you can’t really go too wrong with these, which is another reason I love them. Bung in the key ingredients, whizz them together and you’re pretty much good to go.
- 3 cups fresh watermelon, try to remove as many pips as possible but don't stress too much
- 1 lime
- ⅓ cup elderflower cordial
- 1 cup ice
- slug of gin, or vodka if needed or appropriate
- Simply bung it all in a blender and pulse until slushy. The only thing you could do wrong here is to over pulse which you don't want to do as you want it to be slushy and icy and delish. If you do go over the top, don't panic, just bung in some more ice and be a little less eager next time.
