Well, Christmas is now officially over and my goodness was it delicious. I have most definitely gone from scoffing copious amounts of pigs in blankets to feeling like a pig in a blanket. But I am emerging from the blanket and my body is screaming out for some freshness. It’s basically yelling ‘my god woman, hand me a vegetable, stat!”. And so, this is what I turn to.
Creamy, and sweet from the mango and banana, I love having this as a breakfast, or a snack. This smoothie is one of my current favourites and I know you will love it too. One of my favourite things to do, is to prep lots of these at once, and then pop the extra chopped fruit into a few ziplock freezer bags, then freeze them, so that they are ready to go at a moments notice. Such a handy tip!
- 1 banana
- 1 mango
- 1 cup baby spinach
- 1 cup almond milk (although you can use any milk you like, or water is fine too, or coconut water!)
- ½ cup ice
- (note: you can also use frozen fruit, but in that case just leave out the ice)
- Pop all the ingredients in the blender and blend for about 1 minute or until the mixture is thick and creamy. Divide between two cups. Serve immediately.
Delicious, yet oddly filling – in a good way. Here’s to making 2017 the best year yet everyone, we can do it!
