These raw carrot cake balls are a total saviour and I highly recommend them being in your handbag at ALL times.
I really don’t like to play favourites, but if i was forced to choose my favourite cake…it would most likely, possibly be carrot cake. Don’t panic, walnut and raisin, that’s only if I was asked on a Monday, and, have no fear No pudge chocolate fudge Brownies, it wouldn’t have been at 3pm on the day of a full Moon. Relax you delicious scone you, they didn’t ask me about my favourite Cream Tea!
So, we’ve established that there is a time and a place for most cakes. But I will admit that most times and most places are carrot cake appropriate. Is my love of carrot cakes born out of the fact they generally come laced with lashings of sugary cream cheese frosting. I used to think so. But actually it turns out it’s the cake itself I love. The moisture from the carrots (don’t freak out, I didn’t say moist….eep), and the classic flavours of cinnamon and nutmeg just make for a gorgeous combination.
So, I came up with these raw carrot cake balls using the same key ingredients, but stripping the cake back and making it as simple as possible.
These literally only take a few minutes to whip up, and they are perfect for when you’re craving something sweet and delicious, but these won’t be followed with any feelings other than happiness!
Gluten free, sweetened with maple and even crammed full of raw veggies, means these little balls really are crave-busters.
- 1 cup desiccated coconut
- 6 medjool dates, stones removed
- 1 cup nuts (brazil, macadamia, almond or pecan are fab)
- ½ cup grated carrot (about 1 carrot)
- ¼ cup maple syrup or honey
- a little vanilla extract
- pinch cinnamon
- pinch nutmeg
- Save ¼ cup of the coconut and put to one side.
- Then bung everything else in a food processor and blend. Once it’s all mixed well, scoop into little balls, roughly the size of a lycee. Roll in the coconut you set aside. Store in the fridge to firm up.
Either eat either straight from away, or pop in a tupperware box. The perfect handbag companion.
