A few weeks ago I cooked for a truly lovely baby shower. I was so happy to be asked to make the food for Calgary’s baby shower and it was a really great day.
It was a delicious and nutritious feast – a real vegan affair.
Juices on arrival
Spinach, apple and avocado. Beetroot, apple and ginger. And zingy carrot and ginger
Nutty quinoa salad with courgette, tomatoes, hazelnuts and lots of herbs
Aubergine, basil and pomegranate salad with a saffron yoghurt dressing
roasted vegetable and puy lentil salad with tahini dressing, adorned with cornflowers
Avocado, lime, broccoli and radish salad topped with avocado dressing and sesame seeds
Healthy chocolate and beetroot sponge cake with coconut cream, draped with fruit and flowers with a side of mixed berries
