Mango, Coconut, Kale & Lime Smoothie

Green smoothies are such a great way to start the day.  Never is this more true than when the festive season is approaching.  Starting the day with a smoothie, particularly a green one ensures you get your daily dose of goodness and gets you feeling great from the moment you get up.I’m always being asked for advice on how to stay healthy over the holidays when there’s so mud temptation around, and my first top tip is to start the day with a green smoothie!  It’s an injection of goodness and gets the day off to a cracking start.

No more dragging yourself out of bed, you’ll be bounding down the stairs to enjoy this little gem.

This is a great green smoothie for beginners because of the sweetness of the mango.  The creamy coconut and the zing from the lime mean that if you close your eyes you can almost feel the Caribbean sea nibbling at your toes.  Almost.  The dose of Kale is just incredibly good for you.

So this is a real winner.

Mango, Coconut, Kale & Lime Smoothie

Serves: 1 large (or two smaller) smoothies
 
Ingredients
  • 1 handful of mango chunks ( I always have some frozen waiting for me in the freezer)
  • 2 good handfuls of shredded kale
  • 1 frozen banana ( again, always keep some in the freezer, they are so useful!)
  • ¾ can of coconut milk
  • juice of 1 lime
  • 1 dessert spoon of super greens powder (optional)
  • water, as needed
Instructions
  1. Simply pop everything into a blender and blend until smooth and creamy. Add a little water as needed until its a drinkable consistency.

I don’t actually have a blender so I just use my food processor and then I pop it through a sieve.  Easy Peasy!

Although I have to admit that my sister has just bought a Nutri Bullet and I have major blender envy.  I think I NEED one.  I can hear my kitchen cupboards groaning at the thought…

This smoothie is perfect for staying healthy this holiday season!
