This is one of the most delicious dips you will ever taste.
This is the best kind of dish – it’s seriously delicious, it’s ridiculously easy to make AND has people proclaiming it’s the “best thing they’ve ever tasted”. Now I’m not going to lie, that person may have been exaggerating slightly…I mean have they never had one of my magic rolo mug cakes or salted caramel chocolate cookies?!
But seriously, in the world of dips this is definitely up there with the best of the bunch.
And I’m not exaggerating when I say this is one of the easiest things I’ve ever made. All you have to do is whip the Ricotta until it’s thick and creamy and you literally want to dive into it. Then squeeze with lemon juice, sprinkle with salt and pepper and top with a drizzle of olive oil. Serve with crusty garlic bread and wait for the applause.
This would make a great starter for a dinner party, or would be an amazing addition to a lunch where you were tucking into parma ham, salamis and tomato salad
Are you ready, because this is a very complicated method that only really clever beans will be able to follow? PhD’s at the ready people, adjust those thinking caps….
Right, here goes.
- 1 x tub of ricotta
- juice of ½ lemon
- salt and pepper to taste
- drizzle of olive oil
- Bung your ricotta into a bowl and use an electric whisk (or elbow grease) to whisk the ricotta until it's thick and creamy and luscious looking and looks like you want to dive right into it. It should look like the consistency of a dreamy looking buttercream icing.
- Season with the juice of half a lemon, salt and pepper to taste.
- Pop into a lovely bowl and drizzle with olive oil. Ta Dah. Wipe that brow, I know that was Tough (yup that's tough with a capital T)
You might be really pooped after those hard two minutes it took you to whip up the best starter ever, in which case have a little snooze….
